I suspect it's some type of malfunction related to the sensor/heater. I have no experience with appliance design/repair, and without a service manual, I'm not sure where to start.
I'd really appreciate if someone could provide some insight.

Shows how little I know about this subject. I had just assumed it was a standard ice maker, but after looking at the parts schematic (attached), it appears to be of the flex variety.
If you look at the schematic, there's a chamber on the back of part #11 where the shaft from the ice tray rests? That circular piece of plastic was broken. I assumed I had broken it while taking things apart. But if I put things back together and rotate the tray, as if it were trying to dispense ice, at the point which rotation stops and the tray begins to flex, it seems force is exerted at the exact location where the plastic is broken.
