Defrost cycle

This refrigerator was heavily iced up.  No tech sheet available.   How do I initiated defrost cycle.    I used a steamer to defrost so it would cool again.    I would like to go back in a few days & see if I can initiate defrost & diagnose if it has a defrost problem or the door was not shut.
