My Kenmore oven is just showing the number 8.  I can't change anything and I need it to bake tomorrow.  Any ideas?

Try cycling power to the unit:  cut circuit breaker for several minutes then turn back on.  If that doesn't work, then the ERC is borked and NLA.  Translation: the control board is broken and is no longer available.

  Any ideas?

You may need to resort to more traditional cooking techniques...
