Viking VGIC3054BSS Oven Takes Forever to Bake

We've had this oven for about 10 years. I've replaced the ignitors once already and thought that was the problem again, but I see they are both firing. The issue is that it takes a loooong time to cook stuff. I'm thinking that the thermostat is busted (e.g. I set it to 300 and it thinks 200 or something).

Looking for repair manual and advice on what to check with my multimeter to solve problem. Thanks.

(Ps. I placed a request for the repair manual in that section of the forums.)

I'm starting to do all the requisite continuity checks on the heat sensor (good), and the thermal fuses (on back, haven't checked yet).  While the front of the dryer is open I wanted to do the voltage check going to the igniter, but my understandign is that I have to do this while the dryer is running (makes sense).  However with the front panel of this dryer off to access the gas valve and ignitor, etc. the drum is unsupported and I'm worried about running the dryer with the front off.

How do I test voltage on the ignitor for this unit.  OTher dryers I see online have a lower removable panel to access the gas valve and ignitor, but mine doesn't.

According to the wiring schematic I have that shipped with the appliance, this is a dual-element heater and neither of them work.  The indicator light works though.  The other 3 heating elements work fine.

Any advice on where to start trouble-shooting?  A repair manual would be helpful if anyone has one handy.

Viking Range Repair Manual

Can anyone please provide a manual for this model?  I never like to open up appliances without a roadmap of what to remove first to access the wires I need to test.

I need to do a current reading on my oven ignitor and I'm not sure of the best place to insert the meter.  I do not have a clamp-on amp meter, only a probe-type multi-meter.
