Instead of the usual Show 'n Tell on a technical topic, we're going to post tech sheets in the comments to this Calendar Event (scroll down to see what's posted so far) and ask specific questions that can only be answered by reading the tech sheet. If you at least try to answer the questions beforehand, you'll get a lot more out of it. The tech sheet and the questions are posted in the comments section below.

Kenmore Gas Oven mdl# 790.71382703 will not maitain temp

Does it take a long time to preheat? I would bet its the ignitor. Check the amperage draw when the ignitor is on. It should be over 3 amps.

Ovens don't go to a set temp and maintain that temp. 

If you set your oven to 350 it will preheat up to like 375 then the burner will shut down until the sensor in the oven senses about 325 and the burner will re-light. 

This cycle continues to maintain an AVERAGE temp of 350. 

When an Ignitor gets weak it takes longer and longer to cycle back on and causes the symptoms you describe. 

Like the others said. Most likely a weakening Ignitor.

Does anyone have experience with replacing this part 316489400 number to a regular GE flat oven ignitor like wb2x9998?

Yes , also if bracket is to big I carefully switch brackets. Or you could use the way cheaper Frigidaire igniter.

Eva is correct. Sometimes the cage will block burner tube air holes so you may need to swap cage from old ignitor (cage-less) to new one.
