Viking RVDR33025B Thermostat

Trying to troubleshoot my Viking RVDR33025B SS dual-fuel range.  During a test today after preheat, dip, and recovery, the oven maintained 300 deg F on the dot for the duration of the cook with the thermostat set at 325 deg F.  It also seemed low the other day when I was cooking at 350 deg F, but I did not have my oven thermometer yet to take data.

A service manual would greatly help so I can verify the thermostat potentiometer characteristics.  RTD seems fine.  I found an older/different Viking range manual on Scribd, but my thermostat values do not seem to match.

 

P/N for the thermostat is PJ030035 if anyone has a way to find the tech specs.
