Ice machine cooling tower

I want to build a cooling tower for a Manitowoc ice mach m#: QY1305W.
I know the basic principles for building it but would like help on the details.
I need to fugue out the overall size of the structure, the size of the reservoir, the sump capacity and if I need to incorporate a fan.
Anybody with any experience with this please help.
