Amana ACR4303MFW4 Range burner issues

First off, I ditched the safety coils that came with the range because we had so many problems with them randomly turning off. Now, with regular coil burners, the two large (8") eyes will randomly go "full blast" and burn to a crisp whatever is on that eye. They will start out working just fine and sometimes we get through cooking with no problems. Other times they will work fine for a few minutes and BOOM!, they're on high! I was thinking about replacing the infinite switches but thought I would check with the wise collective first. (P.S. the small burners work fine with no issues.)
