Sizing a window AC unit for a shipping container

I'm trying to determine what size air conditioner I need. Here is what I am trying to do.

I have a 40 foot shipping container that I am converting to a commercial kitchen. It will be used to make ice and syrups in my daily shave ice business.

It's 40 long by 8.8 high by 7.6 wide (interior). SF would be 304. If I rounded to 40x8 it's 320. The size air conditioner I see that would be closest, is the 8,000 BTU.

However, my question is how do I allow for 5 to 6 freezers that will be putting off heat? In addition to a 20 to 30 gallon hot water heater.

I saw on a site elsewhere how to add for windows and people, but not appliances, and given not many people would have 6 freezers in their homes, I can see why.

At this point the building will not have windows, but it will have a roof coating that has an insulating material, as well as the exterior walls will be painted with a ceramic coating that claims a 90% effective in blocking the suns energy.

When determining SF, does height make any difference? Seems it would, but I am no expert by any means hence I am asking here.

I have a 11,500 air conditioner I can use, but will that be too much? Humidity shouldn't be a large factor, as it's fairly hot and dry in the Summers here. (Often high 90's/low 100's). I read some other postings regarding over sized units and humidity, but in a low humidity area, will it make much difference?

Basically I am wondering if 6 freezers cycling at any time, 24 hours a day, would allow an 11,500 to work okay with it, or stick to an 8,000?

Also, will running a larger unit on low, be the same as running a smaller unit on high? Or is it the same, as far as humidity and cooling?

Any wattage used by the Freezers will be converted to heat...

1 Watt = 3.4 BTU's
