My seven year old Dacor vent hood is not working.  Lightwise any way.  The vs fans are fine but the lights, (yes I put in new bulbs), do not work.  Any ideas?

most of these hoods have a step down transformer and a fuse. check for a blown fuse at the transformer. a lot of times when the bulb goes you get a flash at the bulb and it blows the fuse.

I concur.  Tested the lamps and they are fine.  Tested the lamp holders and they seem to be good as well.  Doesn't seem to be any fuse or transformer to mess with.

What would be the best way to change out the dimmer?  I see it has a cover.  Does the whole assembly have to come out?
