I need to convert this unit back to natural gas. The tech data sheet I have seems to be out of date. Anyone got a tech sheet or service manual for this one?

The tech sheet requires an adjustment to the "orifice hood" on this oven valve. What is an orifice hood?

The brass color part is the orifice hood.   Almost always, (but a very few times NOT), if you see this style of orifice hood there will usually be a smaller center spud that is drilled for LP gas.   To convert to LP you screw the orifice hood down all the way snug, (DON'T over do it, just snug).

 

To convert back to natural gas you unscrew the orifice hood about 2 1/2 turns.

 

The air shutter also has to be adjusted, (usually almost, to all the way open for LP as you have in your picture), and for natural it will be shut more, (less air needed, natural flows less pressure).

 

Check to make sure you don't have a leaking oven safety valve, it appears as the flame has been flashing back to the orifice hood from the appearance of the soot/burn marks up the side of the burner tube above the air shutter opening.  If the valve is not snapping open/close good/tight/fast it can cause the flame to flash back to the orifice as it appears maybe happening as evidence by the soot/burn marks.
