Thermador GGSCV365 cooktop. Replace w other brand but keep the fan?

Greetings Master Appliantologists

I have a Thermador GGSCV365 Cooktop and exhaust fan.   The cooktop needs to be replaced, but the fan works fine.  Is it possible to replace the cooktop (with a different brand cooktop) but keep the fan?  The fan control switches are on the cooktop, but I'd be willing to to mount them under the cabinet, but I don't know how difficult it would be to remove electronics that control the fan from the cooktop and rewire the switches.  I'm reasonably competent with wiring, but am I crazy to even attempt this?
