Thermador prd364gdhu electric oven heating issue

Hi All!!

I have a Thermador PRD364gdhu electric oven running ~40 degrees below set temp. With convect on it maybe gets 20 degrees from setpoint, but long after preheat indicator is off.  Also takes a while to recover after opening door, so temps can go like 60+ degrees below setpoint.  Food also cooks pretty unevenly. I'm guessing this is related to a recent self clean cycle that I know was run.

I was planning to test the temp sensor and am ready to replace the oven control board. Other ideas I should consider??  I'm happy to run experiments and help troubleshoot.  It's a real puzzle.

Some questions:

1) I've studied the exploded diagrams but I'm not clear on if I need to remove top/burners to remove/replace temp sensor and/or OCB/PCB. Can I do that from the back?? Taking all the burners off - even on one side - looks like a pretty intense job.

2) $100 for a temp sensor is high even for Bosch! I'll pay it to get the oven working, but seems like this is a commodity part. Is it ok to just swap the harness into a aftermarket sensor instead??
