We have a 'True GDM-12' refrigerator that is keeping the fridge too cold. After doing some checking I am guessing the thermostat has gone bad. Thanks to Covid, I can't go out much so I have plenty of time to investigate and learn new things. After checking prices for the thermostat I have learned these things are extremely expensive. It got me wondering about what is inside the actual thermostat, and I am curious if it can be disassembled & be repaired instead of an outright replacement. Anyone have any experience doing this?

Well, that's a commercial refrigerator.  Anything within that category of appliances will be more expensive...including repair parts.  Heck, just this week I replaced a $1900 control board in a $40k Rational combi-oven.

In YOUR situation, I looked up the temperature control for a True GDM-12 glass door merchandiser and the price is very reasonably priced below $100.  Here's a source:

That thermostat is a bellows-type (charged bulb and capillary) mechanical thermostat.  The bellows in it actuates a set of electrical contacts.  There is nothing inside that's serviceable.  That design has served its time for many years and...once it's done - it's DONE.  Replace it.
