I need to replace the light switch and want to see how this thing comes apart

Most Viking hoods work pretty much the same but there aren't any manuals out for these older ones. Try this manual for a newer one -- it should still apply pretty closely.

I've only done a couple of these so this might or might not help, but once you lift out all of the grease filters, you can stick your head up in there and look at the backside of where the controls are and it's usually pretty obvious what comes apart.
