Gas dryer runs apparently OK apart from not producing any heat.

I've researched this a bit and may try checking the status of the most likely components, but there's one symptom that it has that maybe is a clue as to what specifically might have failed.

While it's running (drum turning) it produces an additional sound like a hum/motor/fan/etc. that lasts for about 10 seconds then stops, then about a minute later it comes back for 10 seconds and this cycle repeats. So I wonder if this might narrow down the possible failures?

I think I can check the thermal fuse by just taking the back off, but I suspect I probably need to do more disassembly to get to other things and at that point I may just get someone to come out and take a look at it for me if the above symptom makes it less likely that it's the thermal fuse say.

Good chance you have bad gas valve coils, (pretty common problem), if one of the coils has completely failed/open the hum/buzzing noise you are hearing is probably the gas valve trying to open.

There should be a plastic square plug on the front of the dryer that can be pop out so you can see the burner and ignitor when it is starting up.

Remove that plug and push the start button, watch threw the site hole for the ignitor to glow and if the humming is happening then the ignitor stops glowing and the humming stops with no flame lighting up.

Thanks! So I started it this morning while watching it and it fired up and the flame stayed on until I stopped it (a couple minutes). I then started it again and the flame came on for a few seconds then went off, and on all attempts after that The "hum" would start, then a couple seconds later the igniter would glow and then after a few more seconds of no gas/ no flame the igniter would go out and the hum would stop, and that cycle would repeat about once a minute.

So yeah, it seems like the gas valve coils or something else involved in turning on the gas is implicated.

Is it reasonable for the valve coils to be intermittent the way I'm seeing, where it started when cold but after warming up it stops working? Or are there other possible causes?

This is exactly what gas valve coils do when they start to fail. One way to verify it is to test the resistance across the coils, then apply a heat gun or blow dryer to them and watch the resistance go up (and usually open).
