Amana ACR4303MFS4 Oven not keeping temperature

Bought this oven a year ago, and while it never has been great at keeping consistent oven temps, it seems to be getting worse. 

 

First step, I inspected the gasket, and it appears that the gasket is a cheap looking piece of crap that does not go around the entire inner frame of the door.  There is even clip holes for the bottom portion that is not currently covered.  I thought maybe that part of it got pulled off, but looking at the replacement parts, this is by design. 

 

Are there universal gasket strips with clips I can cut to my own length to improve the door seal?

Definitely look at the temperature probe. As long as both elements are functioning, that's be the first thing to check. It's going off scale when it gets hot and reporting higher than normal temps most likely.

Oven gaskets always look worn due to the heat and spill overs. If the different in temperature is more/less than 25*f check the temperature probe, like MrApplianceMatt suggested. Also check the wiring at the element terminals. Repair wires if burnt or brittle.
