Have fun! I've never worked on that brand, but most of the commercial gas ranges are very simple.

A lot of them still use standing pilots.

Partstown had a few other manuals for it. You might take a look. A lot of the time the owner's manual for commercial stuff has a wiring diagram or other service info.
